Tomato And Spinach Quesadillas


There are many evenings I find myself having just a few minutes to prepare dinner. I need it to be quick, tasty but want to make sure it is still nutritious. This simple quesadilla recipe hides all the healthy stuff and tastes good so my son doesn't even realize he is eating spinach :)

Tomato And Spinach Whole Grain Quesadilla

Ingredients
  • whole grain quesadillas
  • fresh spinach
  • grape tomatoes 
  • scallions 
  • shredded cheese
  • ham/prosciutto
Instructions
  1. Cut tomatoes in halves and scallions into small circles.
  2. Place spinach, tomatoes, scallions and pieces of ham on a quesadilla.
  3. Add shredded cheese and cover with another piece of quesadilla.
  4. Place quesadilla on a heated pan, flip once.

Hearty Oatmeal


I believe breakfast is a very important, if not the most important, meal of the day. No matter how much in rush we are I always make sure Johaan gets a good nutritious start of the day.
This recipe is very simple and takes only few minutes to prepare. I usually substitute the dried fruits with fresh fruit like blueberries/grated apple/grapes in the summer months.

Hearty Oatmeal 

Ingredients
  • 6 heeped teaspoons of whole grain oatmeal
  • 1 cup of water
  • dried fruits: blueberries/cranberries/cherries/prunes
  • pecans
  • 2 teaspoons of whole milk organic yoghurt
  • honey/aguave syrup

Instructions
  1. Mix oatmeal, fruits, pecans and water and bring to boil.
  2. Simmer until thick.
  3. Add yoghurt and drizzle over the honey.
