There are many evenings I find myself having just a few minutes to prepare dinner. I need it to be quick, tasty but want to make sure it is still nutritious. This simple quesadilla recipe hides all the healthy stuff and tastes good so my son doesn't even realize he is eating spinach :)
Tomato And Spinach Whole Grain Quesadilla
Ingredients
- whole grain quesadillas
- fresh spinach
- grape tomatoes
- scallions
- shredded cheese
- ham/prosciutto
Instructions
- Cut tomatoes in halves and scallions into small circles.
- Place spinach, tomatoes, scallions and pieces of ham on a quesadilla.
- Add shredded cheese and cover with another piece of quesadilla.
- Place quesadilla on a heated pan, flip once.
